Spain's famous Paella is the regional dish of Valencia where it originated. It takes its name from the dish in which it is cooked and there are many variations almost any combination of meat, vegetables and seafood can be added to the rice.

Well known in the UK, there are however a few 'secrets' to cooking the perfect paella. Chose the right stock and rice, add a pinch of saffron but, for an authentic taste cook over a flame or on the barbeque and create a layer of toasted rice.
